"Beautiful Mother's Day Lemon Pound Cake" ~looks so beautiful after adding strawberries.
~ I mentioned in an earlier blog that I was trying a new recipe for lemon pound cake. As I stated before I have several family favorite recipes that I usually stick with, but I thought that this particular cake sounded like it would be wonderful with strawberries for Mother's Day! So my son and I attempted this new cake and we have come to realize why I stick to the favorites. It was totally delicious, but didn't seem to cooperate - it kinda got stuck in the pan. I have a few pictures to share of that wonderful cake. It didn't look very well... until I had an idea...I wanted the cake with strawberries.....so I thought fill the center with berries and no one will be the wiser!! The cake truly was amazing, it has lemon zest, lemon extract and lemon juice. So yummy especially with strawberries and fresh whipped cream. ~So delightful for our Mother's Day dessert!!~ Enjoy~ Sara
~Lemon Pound Cake~
Preheat oven to 350-and generously grease a bundt or angel food pan
-heat 1 cup of milk and 1/2 cup of margarine til boiling, set aside
2 cups of flour
1/2 tsp salt
3 large eggs
2 cups sugar
1 tbsp vanilla extract
1/2 tsp lemon extract
2 tsp baking powder
1 lemon- zested and grated
Topping~combine 1/4 cup sugar and 3 tbsp lemon juice
-with an electric mixer, beat eggs on high speed until light and fluffy- about 5 mins
-on medium speed mix in 2 cups of sugar, beat in lemon and vanilla extracts.
-on slow speed mix in flour and salt, just until blended
-pour in hot milk mixture, then add baking powder; beat until blended
-with a rubber spatula fold in lemon zest; scrape into prepared pan
-bake 50-55 min, or until skewer comes out clean- cool in pan 5 min
meanwhile- in a small bowl combine lemon juice and 1/4 cup of sugar
- invert cake onto wire rack; brush top and sides of cake with lemon syrup- cool completely
