New beginnings; aren’t they wonderful!?! A chance to start fresh. Taking walks, eating healthy, beginning the year with a clean house. It just refreshes the soul.

This week my daughters, grandchildren and I started walking. The weather has so warm, and the sky is so blue and clear! This photo is the lake that we have started walking around. Such a beautiful view with the mountains with snow in the background.

There was so much to see, ducks, birds, and wildlife everywhere. We spotted three quail in this bush. They were camera shy!!

We were able to feed the ducks though, they were very eager to come visit. The kids were so excited to see them up close. It was so much fun to share nature with them and also to teach them a little about exercising and keeping healthy.

We are also trying to eat a little more healthy, nothing extravagant, just back to the basics of wholesome eating. This chicken stir fry is one of my favorites and I thought that I would share the recipe with you. I serve it with rice. Wet sticky rice! I have one of those wonderful inventions!! A rice cooker!! It is so easy to do, all you do is add the rice and water in the pot and plug it in and “voila”, in 30 minutes you have fresh sticky rice.You can always serve with chow mein noodles(my hubby’s favorite). Of course that will add extra fat, but they are so good.

Chicken Stir Fry

(This makes a large pan full~ cut down the recipe for a smaller amount)

I am listing the ingredients and instructions together. I begin at the top and start adding items ending with the pineapple. Make sure the first few items are almost cooked, then add next ingredient, and so on.

2 tablespoons oil (I use olive oil)

1/2 large onion

1 green pepper

sauté in oil

add 3 or 4 boneless chicken breast (cut into thin slices)

add a few tablespoons of teriyaki sauce, and all of the juice from a can of pineapple chunks

add 6 carrots ~sliced thin

1 cup of broccoli (I never measure)

1 small zucchini ~sliced thin

1 small summer squash ~sliced thin

1 can of La Choy bean sprouts

1 can of pineapple

Serve over rice.

  2. What a beautiful area. I think even I would be tempted to go for a walk out there. You have a lovely family. Seeing your grandchildren feeding the ducks brings back memories of when my grandson was little and we would take him to feed the ducks in an area quite like the one you visited. I'm going to try the recipe as soon as I get the ingredients. Thanks for sharing. Hugs

  4. How wonderful that you have a pretty place to walk. I'm sure it is beautiful in every season. Not only are you teaching the kids good healthy habits but you all are making some wonderful memories as well!

  5. How much fun you look like you are having. Walking with those beautiful grand babies. The lake looks like a wonderful place to walk. I need to drop 10 pounds before my grandsons wedding in July. Gotta get on it!lol Enjoyed my visit.
